Coonhunters Cake or Pineapple Dump Cake

Whatever you call it, it is a good, quick and easy cake to make. No box-cake mix needed, just a few pantry staples and fresh eggs. You probably already have all or most of the ingredients to make this coonhunter’s cake.

What can you do with canned beans?

Around here we make re-fried beans with a jar of pinto beans. Taco night has never been the same since I started canning pinto beans. All I do is drain off the liquid and whirl it up with my stick blender with a little chili powder and a splash of olive oil to give it a shine and Wha-lah re-fried beans, just like that. Now it just takes a minute to heat up on the stove or in a microwave.

For those of you who are just getting started with canning, you will need to make sure you have the basic home canning supplies on-hand.

Canning Utensil Set– usually under $12
Granite Ware Water-Bath Canner with Rack $20 or less
Canning Jars normally around $10 for 12
Pressure Canner from $50-$250 depending on brand
