Coonhunters Cake or Pineapple Dump Cake

Whatever you call it, it is a good, quick and easy cake to make. No box-cake mix needed, just a few pantry staples and fresh eggs. You probably already have all or most of the ingredients to make this coonhunter’s cake.

I must say that this recipe is adapted from a dear woman who has since passed, Sandy Cox. She always made this when we had a carry-in dinner at our Southern Ohio Coon Hunters Club, hence the name. She was a wonderful woman who was taken way too soon, and we think of her every time we have this cake. Thanks to Mandi Corbin for passing on the recipe to me.

Please note that I have given 2 recipes here that are for different sized pans, with the icing being the same for both sizes of cakes.(if you make nothing but the icing below, it will change your life if you’ve never made your own icing before)

Here is the ingredient list for the coonhunters cake:
2 eggs
2 Cups flour
2 Cups sugar
1 tsp baking soda
1 tsp vanilla
1 large can crushed pineapple with juice

Mix together and bake at 350 for 35 minutes I mix and bake in a smaller Pyrex dish like the one below rather than a normal cake pan. No need to wash an extra bowl just mix it right in the pan.

If you want this cake to fill a standard cake pan like this one, the recipe can be added to in order to accommodate it.

Here is the ingredients for a full size cake pan:

(I don’t mix it in the pan because I don’t want to scratch my non-stick cake pan.)

3 eggs
3 Cups flour
3 Cups sugar
1 1/2 tsp baking soda
1 1/2 tsp vanilla
1 large can crushed pineapple with juice

Now the icing! This is a fantastic cream cheese icing that can be used on any kind of cake not just the coonhunters cake. It is so much better than those tubs of icing you buy at the grocery store. I sometimes make it just to put it in the fridge and have a little spoonful of it every time I get the urge for something sweet. It makes a great cookie filling too!

ICING:
1 8 ounce bar cream cheese
1 stick butter
Allow to soften and cream together
Then add:

1tsp vanilla

2 Cups powdered sugar

Spread on cooled cake

Make Coonhunters Cake Round

I recently made this original recipe in a springform pan. See the recipe ingredients and amounts below these pictures of my latest Coonhunters cake.

Here is the ingredient list for the coonhunters cake:
2 eggs
2 Cups flour
2 Cups sugar
1 tsp baking soda
1 tsp vanilla
1 large can crushed pineapple with juice

Place mixed ingredients into a nonstick springform pan and bake until done in the center. The one pictured above could have cooked a bit longer, but that didn’t keep us from eating it!

Be sure to choose the size pan that will fit on the size of cake stand you have. I got my cake stand at the Thrift store, but you can find them on Amazon as well. See the one below here.

      1. I love this easy icing, too!
        Sometimes I like to flavor it with fresh lemon juice or chocolate (cocoa) for different cakes.
