Keto Recipe: Hard Boiled Egg Pudding

This is another favorite keto recipe of ours. It was originally found in a Pampered Chef recipe booklet passed around by consultants. We hope you enjoy this just as much as we did when we made it.

We do not condone living your life on the keto diet all the time. There is a need for low carb alternatives for certain people. Using a keto diet to kick-start a more healthy way of eating is helpful for thousands of people but has shown to have some down-sides as well. Please do your research before using this way of eating as a constant in your life.

Ingredients Needed for this Keto Recipe

* 10 hard-boiled eggs, peeled * 1 (14oz) can coconut milk * ½ cup Swerve confectioners (or equivalent amount of liquid or powdered sweetener) * ¼ cup unsweetened cocoa powder * 2 teaspoons vanilla * 1 teaspoon ground cinnamon * ⅛ teaspoon salt

You probably already have all of the ingredients to make this pudding. If you are shopping for coconut milk, go ahead and get a few cans for the pantry shelf as well.

Instructions For Making Hard Boiled Egg Pudding

Place all the ingredients into a food processor or blender and puree until very smooth.It can take up to 2 full minutes to blend smooth. Taste and adjust the level of sweetness to your liking. Place in the fridge in an airtight container for 3 to 4 days. Tastes better the day after you make it.
